you’ll need:
- 1/4 cup orange juice
- 1/4 cup vegetable oil
- 2 tablespoon honey
- 2 tablespoons finely chopped fresh parsley
- 1/2 teaspoon dried basil, or to taste
- 1/2 teaspoon grated orange zest
- 1/2 teaspoon table salt
- 1/2 teaspoon pepper
- 8 skinless, boneless chicken breast halves
you’ll need to:
- in a medium mixing bowl, mix o.j., oil, honey, parsley, basil, orange zest, salt & pepper well.
- pour in to re-sealable bag plastic bag, add chicken breasts.
- refrigerate and marinate overnight.
- when you’re ready to cook, remove excess marinade and cook as you wish, be it grilling, pan searing, baking or george foremaning.
side note: i cut everything in half (1/8 cup orange juice, 1 cup honey, etc, with 4 chicken breasts instead of 8) and it turned out pretty delicious. nice thing about marinading, is it doesn’t have to be really precise. experiment away.
