3 corn cobs
1 garlic love, crushed
small bunch cilantro, chopped
1 small green or red chili, seeded and finely chopped
1 green onion, chopped
1 tbsp. soy sauce
3/4 c. rice flour (or whatever you have on hand)
2 eggs, lightly beaten
4 tbsp. water
oil, for frying
salt and pepper to taste
sweet chili sauce, to serve
with sharp knife, slice kernels from cobs into large bowl.
add garlic, cilantro, chili, green onion, soy sauce, flour, beaten eggs and water. mix well.
season with salt and pepper and mix again.
the mixture should be firm enough to hold its shape, but not stiff.
heat oil in large frying pan.
add spoonfuls of the corn mixture gently spreading each one out with the back of the spoon to make a roundish fritter.
cook 1 - 2 minutes on each side.
drain on paper towel and serve with sweet chili sauce.
