Mexican German French Salad

My wife and I accidentally concocted this salad one night — a verbal argument had devolved into a kitchen wrestling match, and these ingredients were spilled together. Though that first salad had to be eaten off the floor and the side of the refrigerator, it has since played a key role in solidifying our love for one another — a true, undying, accidental salad-based love that will never so much as quaver.

It’s kind of a riff on a recipe my sister-in-law makes. Hers has bacon and white onions, maybe. If you can’t find watercress, baby spinach is okay to use. But are you really okay with “okay?” We are Arkansas Rockers.

• watercress
• chopped green onions
• diced avocado
• pepitas (roasted squash seeds)
• cilantro leaves
• dressing: stir together 3T canola oil, 2T cider vinegar, 1/2t dijon mustard, 1/2t herbes de provence*

Combine 3 parts watercress, 2 parts each of the other veggies, one part each pepitas & cilantro (or use any proportions you like). Toss with dressing, serve.

*my sister-in-law’s original dressing recipe calls for a mysterious spice called “German seasoning” (she is of German and Mexican descent), but I suspect it may just be the also-mysterious herbes de provence. If you can find something called “German seasoning,” maybe you should use that.
