Best Scrambled Tofu Recipe

Seriously, there are a shit-ton of these out there, but this one is the best I’ve encountered. Original credit goes to Isa Moskowitz over at The Post Punk Kitchen ( www.theppk.com ).

Spice Mixture
- 2 tsp cumin
- 1 tsp thyme (crumble with your fingers)
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp turmeric

Everything Else
- 1 medium onion diced
- 3 cloves garlic minced
- Some olive oil for sauteing. You know, like a tablespoon or so
- 1 lb of your favorite firm tofu
- Juice of one lemon
- 1/4 cup of nutritional yeast
- 1/4 cup of vegetable broth

Assembly

Mix the spices together in a small bowl and set them aside.

Add some oil to a big skillet and saute the onions and garlic until the onions are translucent.

** At this point, you can add some mushroom, spinach, asparagus or whatever veggies you feel like putting in. It’s up to you. Be creative.

Now add the spice mixture and let that cook for a few minutes.

Add the broth (you can use water too) to the mix and deglaze the skillet a little bit. Crank the heat and let this reduce for just a couple of minutes.

Go ahead and crumble up the tofu and mix it in well with the spices and veggies. Cook for about 5-10 minutes on med heat.

Add the lemon juice and mix. You can turn the heat off now.

Now add the nutritional yeast and mix that in.

Serve with some homefries and prepare to have your mind blown.
