Chive-Butter Mashed Potatoes

4 large potatoes
1 stick of butter (softened, not melted)
1 bundle of chive onions (just use the green part)
3-5 large cloves of garlic
2/3 cup half’n'half
salt/pepper to taste

Peel and scrub potatoes, then cut into 1 1/2″ pieces. Add to salted boiling water. Make sure they’re completely covered in by the water and boil for no less than 20 minutes. The longer they cook the easier to mash and they taste better, too.

While the potatoes are cooking, put the stick of butter in a bowl. Finely chop the chives and garlic and add to the butter. Mash this around until it’s evenly mixed. It actually tastes better the longer it sits, so If you do this first or earlier in the day, or the day ahead you’ll get a more oniony flavor.

Drain the potatoes and add the half’n'half…mash. Then add the chive-butter and mix well. If you followed my advice and bolied extra long, you won’t even need a masher, just a fork or spoon. Add salt and pepper to taste.
