what you’ll need:
- 2 pitas, halved crosswise
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 2 tablespoons unsalted butter
- 1 bunch fresh spinach
- 3/4 teaspoons kosher salt
- 1/4 teaspoon plus 1/8 black pepper
- 4 large eggs
- 1/2 cup feta, crumbled
honey do list:
preheat oven at 425
on a baking sheet:
- place pita halves cut side up
- brush pitas with olive oil
- sprinkle with 3/4 teaspoons of paprika
- set aside
in a large skillet, over medium heat:
- melt butter
- add spinach, 1/2 teaspoon of salt & 1/4 teaspoon of ground pepper and cook, tossing frequently, until spinach is wilted, about 2 minutes
back to the baking sheet:
- divide spinach evenly among the pitas, creating a well for the eggs
- crack one egg into each well
- sprinkle each egg/pita with remaining paprika, salt & pepper
- add feta to each egg/pita
bake on 425 until eggs are set, about 11 minutes for runny yokes.
wash it down with a nice cold mimosa.
