Morning Glory Muffins

This recipe came from my aunt many years ago who I know got it from Martha Stewart. Best muffins ever.

Makes 12

2 cups flour
1 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups shredded carrots
2 tsp cinnamon ground
1 cup finely granny smith apple
1/2 cup chopped nuts ( I like walnuts)
1/2 cup raisins ( I like golden)
1/2 cup shredded unsweetened coconut
3 eggs
2 tsp vanilla ext
3/4 cup vegetable oil (I like canola)

Whisk flour, baking powder, soda, salt and cinnamon
In a separate bowl mix sugar, eggs, oil and vanilla

Mix wet and dry ingredients into a thick batter and add carrots, apple, coconut, nuts and raisins.
Mix thoroughly

350 degree oven for 25 to 30 minutes (turning tray half way through)

Morning Glory is sort of a traditional name for muffins with carrots, apples, raisins and the like.
