WHAT YOU’LL NEED:
- 8 oz salsa
- 4 eggs
- pepper
- kosher salt
- avocado
- cilantro
- sour cream
- tortilla chips
TO DO:
- on medium, in a skillet, toss in salsa.
- crack open each egg in a separate bowl, then insert into skillet carefully.
- add pepper and kosher salt for taste.
- cook until you desire (about 5 minutes, or so).
- put it on a plate, fool.
- add chopped avocado, cilantro, chips and a dabble o’ sour cream if you desire.
ADDITIONAL/OPTIONAL WHATNOTS THAT MIGHT BE DELICIOUS:
- black beans/or black bean salsa.
- chopped/sauteed onion.
- meat? salmon on the side might be good.
