Garlic and Sage Crusted Pork Loin

This is super easy and scrumptious. Leftovers make perfect sandwiches. Thank you Martha Stewart.

2 tb. olive oil
1 tb. chopped fresh sage
2 gloves garlic, finely chopped
1 tsp. salt
1/4 tsp. fresh ground pepper
1 pork loin, approx. 2 lbs.

Preheat your oven to 400 degrees. Combine 1 tb. olive oil, sage, garlic, salt, and pepper in small bowl. Spread mixture over the pork loin.

Heat one large saucepan, add remaining olive oil and brown the pork loin on all sides. Move the pan to the oven and cook until the internal temp is between 145 and 150 degrees, about 20 minutes.

Serve with Cannellini Beans with Carmelized Onions or with the Bangin’ Rice Casserole recipe.

Leigh try this out for a pre-bake pork topping:

(this was for a rather large roast, so maybe trim the amounts down a bit)
2-4 shallots finely choppped
3 cloves garlic, finely chopped
3 tbs olive oil
2 tbs fresh thyme
2 tbs kosher salt
1 tbs black pepper

It works best in a mini-chopper/processor. Chop the first two ingredients, then add in the rest and mix until it looks like a relish. Rub it all over the pork loin and cut a few slits, and stuff the slits with the mixture. let it sit for about an hour (i just prepped it and let it sit while I prepped everything else). Bake. Mine was as 350 degrees for aboutn an hour and a half. This is so good, and was a huge hit at the dinner party.
