okay, chili is very subjective. it’s extremely difficult to mess up. for those of you who have never made chili before, here’s a starting point. for those of you who are chili masters, maybe you can find something in here that will make yours better. this is so insanely simple, that even those who don’t consider themselves “cooks” can call themselves cooks within a few hours. best of luck.

WHAT YOU’LL NEED:
- 1 1/2 lbs. of ground turkey (my personal favorite), ground beef (ehh…), or ground soy product if that suits your fancy (morning star makes some good stuff).
- 1 onion.
- 3 cans of beans (i prefer black, chili and kidney, but you can go any way you like with this. garbonzo, brown, etc.)
- 2 cans of stewed tomatoes.
- 1 can of rotel (the spicier the better if you ask me).
- 1 can of corn (optional. i happen to like corn quite a bit, so i add it).
- 1 1/2 packages of chili powder.
- salt (garlic salt never hurts).
- pepper.
- red pepper flakes.

STEP BY STEP:
- chop up stewed tomatoes.
- chop full onion.
- saute onion in a bit of oil for about 10 minutes, until clear.
- brown meat of your choice (no need to do anything to that morning star stuff, vegetarians).
- combine all above ingredients in large pot. to taste: salt, pepper and red pepper flakes.
- on the stove top, throw it on mediumish for ’bout 2 hours (the longer the better, if you’ve got the time) and stir every 15 minutes or so.

that’s it and that’s all. you’re a cook. pat yourself on the back.

SERVES: 8-10, or provides plenty of leftovers! your coworkers will drool when you heat up your good smellin’ goodness in the microwave. they’ll be talking about it ’round the water-cooler.

serve with cornbread (my personal favorite), saltines, or oyster crackers.
