I just made this tonight w/ the huge lump of leftover Thanksgiving mashed potatoes.
1 TB, each, fresh rosemary, thyme, sage - chopped
4 garlic cloves, chopped
2 TBS olive oil
3 c. mashed potatoes
4 c. stock (I used chicken, you could easily use veggie)
1 leek, washed well and chopped
Sautee herbs & garlic in olive oil for about 5 minutes on med/low heat, add leeks and stir around for another 5-7 minutes. Add potatoes, try to break up lumps. Add stock a little at a time, working the lumps out.
Let simmer for 30 or so minutes. Serve with crusty bread slathered in butter.

This is a great idea. I never know what to do with leftover mashed potatoes. Anyway, I made this and it was great. I like to add shallots during the sauté stage and substitute a cup of milk for one of the cups of stock for a little extra creaminess. Thanks for this one, Alannah!
