chick pea soup

Vegetarian

 

yellow onions
cooked chick peas, canned or the real deal
broth - chicken, fake chicken, or vegetable
capers
lemons
olive oil
cumin
cayenne
salt pepper

so, i stold this recipe from pearl, who got it from the village epicurean. its great.

in your cast iron or other favorite skillet, saute a couple of onions until they are brown and soft. add the chick peas. two cans or two big cups. also add broth. simmer in the skillet a while, say 10 minutes. add salt and pepper to taste. add a pinch of cumin and a tiny bit of cayenne. ( i use the tip of a butter knife.)

when the soup is approaching doneness, get a small bowl and pour some olive oil in to it. squeeze some fresh lemons.

when the soup is done, pour it in to bowls, add some capers to each bowl and then some of the lemony-olive oil goodness. serve. it is yummy. good to have some bread to dip.

I too, have a lovely chickpea soup recipe, but it is much more Italian in origin, with sage and rosemary instead of cayenne. let me know if you are interested and I’ll send it your way!
