Garlic roasted cauliflower

1 head of garlic-cloves separated but not peeled

1 large head of cauliflower, trimmed and cut into large florets

4 ½ tbs. olive oil – divided

Kosher salt / ground black pepper

¼ c. minced parsley

3 tbs. pine nuts, toasted

2 tbs fresh lemon juice

Preheat oven to 450

Bring a small pot of water to a boil – add garlic cloves and boil for 15 seconds. Drain, peel and trim off any brown parts of garlic. Cut the largest cloves in half lengthwise.

On a sheet pan, toss caul. with garlic, 3 Tbs. oil, 2 tsp. salt and 1 tsp. pepper. Spread the mixture in a single layer and roast for 20 – 25 mins, tossing twice, until caul. Is tender and the garlic is lightly browned.

Scrape the caul. and garlic into a bowl along with the pan juices. Add remaining 1 ½ Tbs. oil, the parsley, pine nuts and lemon juice.
