Slap Yer Sister Fried Tofu Sandwiches

Firm or Extra Firm Tofu
Soy sauce (optional)
Some good frying oil
Favorite bread
condiments, pickles, lettuce, tomato, bacon, slaw, avocado, what-have-you

You get your block of tofu and cut it into half-inch slabs. If you have time and/or want to, marinate your slabs for about a half hour in some soy sauce diluted with a bit of water. I find that the tofu is great salty or un-salty (’cause it’s fucking FRIED,) so it’s really up to you. Often I think it’s better un-salty.

Put the cornmeal on a plate and dredge your naked tofu slabs, taking care to coat the edges too.

Heat some oil in a skillet and lay that tofu down like you’d fry anything else.

It’ll get golden brown on one side, so then you flip it over.

When hot and golden on both sides, drain on paper towels or brown paper sack.

Make a goddamn sandwich, will you? It’s so good.

These particular sandwiches kept my sister and me from running away from home when we were growing up. Mom had all kinds of tricks up her hippie sleeves.
