Maxine's Green Bean Salad

Side Dishes

Vegan

 

Green Beans, picked and snapped in half
Roasted red peppers, sliced into strips
Fresh Basil, chopped
Shallots or Onions, thinly sliced
Garlic, smashed or chopped
Sambal chili sauce, to taste
Lime or lemon juice
Cooking oil, about 2 tablespoons
(Can of black beans, drained and rinsed)
Salt and pepper

So, the other night we had fish tacos for my Mom’s birthday. I cooked for like eight people. Earlier that day I had some green beans and didn’t know what to do with them and this is what I made up. It was a hit, and our new friend Maxine was the biggest fan, I think. (She is pretty awesome, when we were talking politics and my mom brought up Dick Cheney’s Kevlar-lined bomb-proof bedroom in Dallas as an example of his paranoia, Maxine said “Or maybe he’s just a MACHINE in bed, and he didn’t want anybody to hear ‘im.” Maxine is British, so the line sounded great.) Anyway, I made some beans.

Boil the green beans until they are cooked to your liking. Blanch them in an ice water bath so they stay green.

Saute the shallots and garlic with a bit of salt until they are dark browny and sweet. (The salt brings out the natural sugars and helps this process)

Add the fresh basil, chili sauce, black pepper and blanched/cooked green beans, sliced roasted red peppers and the lemon or lime juice (to taste). Stir.

Add the can of black beans (optional), salt to taste. Stir it all up, transfer it to a bowl and put it in the fridge to chill for a bit.

It is fucking delicious. (You could serve it hot in winter.)
