one needs a pressure cooker to make beans right, but more on that later.
soak an entire bag of black beans overnight (maybe three or four cups)
cook them until tender and let them sit there cooking.
dice one white onion (or more if you like)
mince four to six cloves garlic (the more the merrier)
chop three green onions
chop half a bunch of cilantro (even if you don’t really like it)
use about a shy quarter cup olive oil (really!)
heat olive oil until it shimmers, add the onions and saute with a pinch of salt.
toss in your garlic and work it around until it smells-a nice!
place the green onions and cilantro thusly and work it all around for a
little bit until it gets all mushy……but not too long.
drop in about a half cup or more of your beans with the juice (juice!)
just squish that shit around until it is kind of pasty…..
put the paste in with your big pot of beans.
salt the shit out of them. maybe an eighth of a cup or more according to taste
go to the section on sauces for the topper.
you probably should make some rice in the meantime……
