Backwoods Baklava

All right, so you have some leftover cornbread from last night and you want to do something tasty with it. All it takes is some honey (preferably very dark, thick, and local) and you can make yourself a tasty treat that I invented called Backwoods Baklava.

Take a slice of your cornbread (which better have been cooked in a round cast iron skillet, or you done fucked up) that’s been sitting in the fridge for a few days and slice it lengthwise down the middle. Stick it in a toaster oven until it gets nice and warm. If it get re-browned a little, that’s fine. It just needs to be nice and warm.

Then, poor the honey all over the center of each slice. You want to get fairly close to the edge, but not so close that it over flows and gets all over your plate. Let that sit for like 10 minutes or so until all the honey that was on top of the cornbread has been absorbed into it.

Now, poor EVEN MORE honey all over the cornbread. Drench that shit and eat it with a fork. You’ve now made Backwoods Baklava. If you’re fancy you could maybe put crushed pecans on it or something.

Also, if you’re vegan and don’t eat honey, this would probably also work with agave nectar, but I haven’t tried it.
