Proper green bean casserole requires cream-of-something-or-other soup and Durkee onions. This farmer’s market version looks kind of raw and rustic and should appeal to bourgeois bohemian tastes.

approx. 1 quart fresh green beans
2 medium white onions (the ones I used were Texas Super Sweet)
3/4 cup shredded Parmesan cheese
butter

wash the green beans and snap off the ends

lay onions on sides and slice, keeping rings intact

in medium pan, melt butter and cook onions until soft

heat oven to low 400s

place green beans in a medium baking dish (they should cover bottom of dish so that no cheese is wasted), then add onions, then sprinkle cheese on top. Bake fifteen, twenty minutes or until cheese is desirably brown and crunchy. Beans should remain slightly crunchy. Eat immediately.
