1 English muffin
tbsp olive oil
small handful of cilantro
1/4 can of black beans
This is sort of a variation on Huevos Rancheros that I prefer to it — while toasting the english muffin, scramble a couple of eggs in a pan. If you want, scrape some Gruyere cheese on those eggs when they’re about done.
When the English muffins are done toasting, spread the butter on there and then get those scrambled eggs on there. At this point, I usually throw some black beans into the pan along with some salsa and warm that shit up and then put it on top of the eggs.
Take yr 1/2 avocado and cut cross-hatches into it and then dump your little cut avocado squares onto the black beans. Now add a couple spoons of salsa and a half-handful of chopped cilantro leaves.
Since we usually have sliced black olives around, I’ll throw those on there too.
Goes great with a Tecate or Modelo or Corona. Takes maybe ten minutes from start to finish.
