Turnip/Veggie Roast

Side Dishes

Vegetarian

 

- 20ish fresh turnips, scrubbed and cut in half.
- 12ish new potatoes, scrubbed and cut in half.
- 6ish carrots, cut into bite-sized tidbits.
- 1 medium bell pepper, cut into tidbits.
- 1 purple onion, chopped.
- 10ish cloves of garlic, quartered.
- Olive oil, use liberally.
- Ground pepper, use liberally.
- Sea salt to taste, but watch that sodium intake.
- Fresh rosemary to taste.

Mix it all up in a large baking dish and roast at 500 for 25-30 minutes until potatoes and turnips are soft.

This makes tons, so plan on eating leftovers for a week, or volunteer to cook for the
Duggars.

I consumed the hell out of this with grilled chicken and rice, but it’d be good with burgers or fish or whatever.

Mmmmmmmmmm…… carbs.
