Vegan

 

2 c red lentils
2 T olive oil
1 yellow onion, finely chopped
1 t cumin seeds
1/4 t ground cardamom
4 cloves garlic, minced
4 c vegetable broth
1 1/2 c chopped tomatoes with their juice
1/3 c chopped fresh cilantro
2 T minced fresh ginger
1 fresh jalapeno, minced
1 t ground turmeric

rinse lentils.

1. heat oil in pan, medium-high heat.
sauté onion until golden brown, about 5 minutes.
2. add cumin seeds, cardamom, and garlic to pan–stir until the spices are just fragrant, about 2 minutes.
3. add the broth, tomatoes, lentils, cilantro, ginger, jalapeño pepper, and turmeric.
4. Bring to a boil over high heat; reduce the heat to low, cover, and simmer, stirring often, until lentils become soft, about 15 minutes.

serve with rice, if you want to.
