Black Bean Salsa that I take to every occasion...

Appetizers

Vegan

 

1 (15 oz) can black beans — rinsed and drained
1 (15 oz.) shoepeg corn — drained (i can only find this in an 11 oz. can, so you either have to buy two and trash some or use less. i’ve tried using two whole cans and it was too much)
1 (10 oz.) can rotel — drained
1 (4 oz.) can chopped green chilies — drained
2 – 3 green onions — chopped
a lot of fresh cilantro — chopped
salt and pepper

so easy. yes, it would be better if you made it all from scratch: fresh beans, fresh corn, etc, but oh well…..

I added some avocado and a little bit of lime juice to this and it was bangin’!
