1 Plantain
4 eggs
Milk
Butter
4 Corn or Flour Tortillas
Mango Chutney or Hot Sauce
Cheddar Cheese
Simple Homemade Salsa (see other recipe)
Olive Oil
Cooking instructions:
Cut plantain into thin slices and fry in a little olive oil until crispy. Put on paper towel to absorb oil when finished. Scramble eggs with a bit of milk and butter. While scrambling eggs, put tortillas in warm oven for 2-3 minutes.
Serving instructions:
Divide scrambled eggs evenly onto 4 warm tortillas. Top with cheese, salsa, plantains, and mango chutney or hot sauce.
