House show chili

This is a good meal if you want to feed a whole bunch of people something healthy, filling, tasty, and vegan and not spend a whole lot of money doing it.

Large can black beans, or bag’s worth of dried black beans, prepared
Can kidney beans
Can pinto beans
Can garbanzo beans
Can red beans
Can tomato sauce, and/or half a bottle of V8 juice, and/or can diced tomatoes

3-4 carrots, diced
3-4 celery stalks, diced
1 white onion, sliced
3-4 cloves garlic, minced
olive oil
salt, to taste
black pepper, fresh ground, to taste
Cayenne pepper, to taste
Oregano, to taste (basil and parsley are ok, too, if you don’t have any)
Cumin, to taste

Some time in the afternoon, pour some oil in a big pot, medium heat.
Saute onion and garlic.
Add carrots and celery, saute some more.
Add beans.
Add seasonings. Don’t go overboard.
Add tomato sauce / V8 / diced toms
Simmer until the band shows up (or at least until the carrots and celery have lost their crunch). While everybody gets introduced and all that good stuff, cook about 2 cups of rice. When the rice is ready to serve, let everybody know.

Serve with saltines, cheese (for the non-vegans), bread, and an assortment of hot sauces. I recommend Sriracha or your favorite Mexican hot sauce.
