I call this recipe Potluck Chili because #1. its vegan and tasty and everyone will eat it and #2. because it makes a boat-load. good for potlucks or to have around the house. AND, its so cheap, you won’t get mad when your roommates eat it all!
Ingredients
4 cans beans (i like krogers organic 3-bean blend)
2 - 4 tablespoons extra-virgin olive oil
2 large onions, diced
4 small or 3 small carrots
(+ any extra veggies in the fridge or from the dumpster)
2 or 3 heaping scoops of jalepenos
2 tablespoons Chile powder, or to taste
4 tablespoons dried oregano
2 tablespoons ground cumin
1 teaspoon allspice
2 large can (28 ounces) crushed tomatoes, undrained
5 cloves garlic, mashed
Salt and pepper, to taste
1. Heat olive oil in big ole pot. Add the onions, carrots and other hard veggies and saute over medium heat until onions are soft and golden.
2. Add the chile powder, oregano, cumin and allspice to the onions. Cook for 2 minutes. (cooking the spices w/ the onion allows the spices to release their flavor and absorb the oil)
3. Add the tomatoes, jalepenos, and beans. Simmer for 45 minutes, adding liquid if the mixture gets too dry.
4. Add salt and pepper to taste, and more jalepenos for more flare.
5. serve over stale chips.
