This is the ultimate single person’s meal that lasts 4 days.
2 cups corn meal
1 cup milk
2 eggs
1 can cream corn
2 cans black beans
1-2 cans diced tomatoes (preferably with peppers)
1-2 cups cheddar/jack cheeses (mixed Mexican cheeses or whatever you prefer)
Mix the corn meal, milk and egg together and pour into a big pyrex pan as a base. Grease the pan if necessary. Spread in the cream corn on top, then the black beans, then the tomatoes, then the cheese. Put it in the oven for 45 minutes at 350 degrees.
