This is shoved down my throat every Christmas morning (thanks, Sheila).
I love it.

PUMPKIN ROLL

Cake:

3 eggs
1 cup sugar
2/3 cup pumpkin (one can makes two recipes)
3/4 cup plain (all-purpose) flour1 tsp salt
1 tsp soda
1 tsp cinnamon
pecan or walnut pieces (whichever is cheaper) to top batter

Beat eggs, add sugar. Blend in pumpkin and remaining ingredients, except pecan/walnut pieces. Spray large cookie sheet with cooking spray and cover with wax paper, then spray the wax paper. Pour batter and spread evenly. SPrinkle with pecan/walnut pieces. Bake for 15 minutes at 375 degrees.

While cooking, sprinkle a dish towel with powdered sugar. When cake is done, remove cake from cookie sheet, place upside down on dish towel, gently remove wax paper, sprinkle powdered sugar on tope of cake, roll cake AND dish towel. (Roll long ways, and this can be divided into two portions easily). Allow to stand and cool for 15-20 minutes.

Filling:

8oz cream cheese, softened
1 tsp vanilla essence
2 tbs butter softened
1 cup powdered sugar.

Mix ingredients together.

Unroll cake carefully. (Don’t let a crack bother you). Spread filling, and roll back up without the dish towel. Wrap well, and freeze if desired. Remove from freezer about one hour before serving. Cuts well while firm.
