Appetizers

Vegetarian

 

3 or more cups of diced potatoes

2 big chopped carrots

1/2 cup diced onions

1 cup of frozen sweet peas

1 can of chic peas

1 cup of chopped raw spinach

1 Tbl spoon minced garlic

Your favorite curry sauce or powder

Garam Masala powder ( to taste)

Braggs Liquid Aminos (to taste)

maybe some fennel seeds if you like em

Filo dough or pastry puff dough

Okay, turn on some Moving Front or Mastodon to get yourself psyched up this might take a while if it is your first time. All the work will pay off though, these are awesome and will last for many meals. I call them Samaras Samosas because I met Lucas Samaras in N.Y. right as I was finishing my very first samosa.

Set dough out to thaw.
Preheat your oven to 350.
Boil the potatoes and carrots until they are really soft in a big pot.
Place the frozen peas and spinach in the strainer and pour boiling carrots and potatoes into strainer.
Dump strainer contents back into big pot after all water is drained.
Add all of your spices and onion and mix it all together really well. It will start to look like mashed potatoes.
Add chic peas and stir again.

Now, lay out the thawed dough onto wax paper.
Cut the dough into 3 sections vetically and again horizontally.
You should have a bunch of little squares. Cut those squares into triangles.
Start stretching those triangles out big enough to hold about 2 Tbl spoons of curry mix.

Fill all of your triangles and place them in a couple of baking dishes.

Bake them at 350 about 30 minutes ( more or less, my oven sucks)or until they are golden brown.

I love these things. Let em cool down for a while and eat them like they are or use your favorite sauce to make it even better.
