Vegan Breakfast Scramble with Hashbrowns & Mornin' Yogurt

Breakfast

Vegan

 

Two servings.

This is a vegan-y breakfast scramble adapted from “How it all Vegan.” It’s best when made while listening to This American Life and drinking juice out of a wine glass.

Make a stirfry out of these things:
Earth Balance (hippy crack)
Faux Meat - 1/2 tube
Broccoli
Mushrooms
Salsa - one big splat
Whatever veggies you have kickin’ around
Garlic*
Onions*

To Drink:
Chai tea,
razzleberry juice

From the freezer:
premade hashbrowns
blueberries

From the fridge:
soy yogurt

Mix the blueberries, soy yogurt and banana to make the delicious breakfast dessert.

This meal is very good. I ate it at 10am & it kept me full until 4:30pm.
*If you are making this for “the morning after” for your vegan lover, you may choose to omit these ingredients.
