Lately

The Sagittarius Fest was pretty awesome–Thanks for the good times and sweet gift Mish!  Let’s get over to the Palace Kitchen for happy hour when it’s a little less spendy, that fondu is in my dreams!  Must have it again!!!

I’ll be in AR this January.  i get into LR on the 8th and will drive up to the Northeast corner of the state for a farm visit, then back to LR that night…OR I may got straight to Fayetteville.  I haven’t decided yet.  I fly back to Seattle on Monday, so I’m hoping to get to have a good night in Fayetteville either that Saturday or Sunday.  

The entire apartment smells like garlic right now.  I’m making roasted pork adobo.  Here’s a brief recipe snapshot:

1 handful of fresh oregano

1Tbsp kosher salt per pound of pork

1 clove of garlic per pound of meat

2 tbsp of olive oil

1tbsp of white wine vinegar

1/2 tbsp cracked pepper

Mash the 1st 3 ingredients into a paste (i used the mini chopper), then mix in the rest.  Cut a few slits into the pork shoulder, rub the adobo sauce all over it and be sure to get it into the slits.  Roast for about 25 minutes per pound & done.

I love making roast pork.  Left overs are awesome–especially the pork sammies.  Just whip up some thin gravy or au ju with the pork drippings, broth, & flour and slice the leftover pork really thin.  Toss it in the au ju and boil it about a minute then add the meat to a toasted kaiser roll with fresh provolone and butter.  You can pour the au ju into a little cup for dipping.  Mmmmm…soooooo rad.
