Attn Shaner: I went to this cooking class on Monday to learn how to make crepinettes with caul fat. The fella who taught the class is named Travis McConnell. He has intentions of opening a neat-sounding restaurant/butcher thing and he might be looking for some qualified butchers. I just wanted to let you know that in case you were anywhere near innerested in it.
As far as I can tell, Travis seems like a decent fellow with good ideas & intentions, but I only spent a couple hours with him.
